Amadeus, multi award winning caterers are a division of The NEC Group with 40 years of experience dealing with venue and event operations. We have a reputation for outstanding food and currently have a position available for an experienced Sous Chef who enjoys delivering first class food and who enjoys being part of a team delivering public catering, fine dining and hospitality to thousands of visitors.
You will be responsible for:
Liaise with Head Chefs, Executive Chefs and Management regarding, what is required in their designated area.
Oversee Junior Chefs to ensure basic concepts are delivered in line with departmental specifications
Manage and deliver a full menu or concepts in designated area, deputise for Executive Head chefs in their absence.
Have input into the development of new creative concepts and menus.
Deliver a wide range of food offers and concepts to a set specification and standards.
Produce and deliver to required standards ensuring all costs are considered for labour, food and disposable orders,portion control and hot plate wastage and stock take.
Responsible for developing team, monitoring performance of staff using appropriate measures and timely feedback.
Checks food quality and ensures food production is in line with departmental specifications, bringing any concerns to the attention of the Executive Chef or Head Chef
Ensure Food Safety requirements are met by you, your direct reports and those working within your areas of responsibility in accordance with Amadeus food safety policy and procedures liaising with Amadeus Food and Safety Support Department where necessary.
To ensure you, your direct reports and those others working within your areas of responsibility do so in accordance with current, applicable health & safety / fire safety legislation and group health & safety policies, procedures and arrangements
To implement and manage those group health & safety / fire safety policies, procedures and arrangements as applicable to your work activities and working environment
Ensure Amadeus system are utilised effectively this includes responsibility that all data in the systems is entered correctly and incorrect data is reported to the Business Systems Team
Team work, good time management and having a flexible approach to work in a 7 day week operation (weekends/late nights) is essential along with the ability to meet deadlines and deliver exceptional customer service.
Ideally as an individual you will have had experience working within a busy kitchen in a similar quality establishment, delivering a wide range of food offers. This position is ideal for a forward thinking chef who wishes to increase their knowledge of food and progress his/her career within Amadeus. Previous experience is essential.
Qualifications and Experience required:
Hold NVQ level 1, 2 and 3 or City and Guilds 706/1 and 706/2 in food preparation and cooking.
Qualified to level 3 intermediate Food Safety
Hold a recognised health and safety qualification (IOSH).
Minimum 2 years' experience working within a busy kitchen in a similar establishment.
Be computer literate and be willing to undertake training to learn the IT systems.
Have a can do attitude and be adaptable to change.
Must possess strong leadership skills.
Can do attitude with high energy.
Be customer focused and able to deliver excellent service.
Strong communication skills.
Be dependable, reliable, motivated and a team player.
